Authentic Greek salad, also known as Horiatiki or Greek village salad is made with cucumber, tomatoes, green pepper, red onion, Kalamata olives, chunks of feta, thyme, olive oil and vinegar. As good as a caprese salad.
Cook's Note: use a relatively wide cooking vessel for the braise. An 11- or 12-inch saute pan with high, straight sides is the best tool for the job, but a large Dutch oven will also work. The increased surface area of these pans means the cooking liquid will come to a boil faster and more of the meat and vegetables will make contact with the hot liquid, which decreases the total cooking time.

Note: when out of zucchini, I have substituted chopped onions and celery ... works fine. Also, we prefer to include 1 chopped jalapeño pepper along with chopped fresh tomatoes. Lacking that we use the 10 oz. Aldi's Casa Mamita Original Diced Tomatoes with Green Chilis.

I prefer fresh spinach and we always start with dried white beans. Also using homemade chicken broth or stock makes a big difference ... for the better

Infused with cumin, oregano, and rosemary. Finished with a bright splash of lemon juice and fresh parsley. Keep it vegan, or add a sprinkle of salty feta, if you like.
NOTE: Do not skip the lemon juice! All the flavor makers in this recipe are important, but I know some may be tempted to skip that last squeeze of lemon juice before serving. It’s amazing what a little bit of acid, added at the end of cooking, can do to brighten up your lentil soup and bring about just the right balance.
