In Lebanon, eggs are usually fried with sumac and a bit of oil or animal fat until the white forms crisp edges. Here we added garlic and chile in addition to the traditional sumac.

A note on storing garlic: Garlic can be stored for a month or two. It stays fresh longer in the refrigerator than on the counter. Place heads of garlic on a shelf in the refrigerator, and avoid the crisper drawer where it is likely to sprout.
Ingredients
  • 3 tablespoons olive oil
  • 1 red chile, such as Fresno, thinly sliced
  • 3 garlic cloves, thinly sliced
  • 4 large eggs
  • Kosher salt
  • ½ teaspoon sumac
