Tender yet firm bites of cauliflower tossed with tomato sauce and just a bit of sausage for flavor and body. The result is a tangy, rich dish.

To make this casserole low carb, we eliminate the bread crumbs and double up on the Parmesan cheese. And we prefer Italian sausage to chicken.
Ingredients
  • 1 medium head cauliflower (about 2 pounds)
  • 1 teaspoon salt
  • 1 tablespoon olive oil, plus more for drizzling
  • 8 ounces uncooked herbed chicken sausage or spicy Italian sausage, casings removed
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • Leaves from 2 fresh thyme sprigs
  • 1 (28-ounce) can whole peeled tomatoes, drained and liquid reserved
  • ⅔ cup breadcrumbs
  • ¼ cup grated Parmesan cheese
  • Kosher salt
  • Freshly ground pepper
