History of Chili: Most historians agree that the earliest written description of chili came from J.C. Clopper, who lived near Houston. Chili powder is a blend of spices, usually ancho chile powder, paprika, cumin, and Mexican oregano.

Ingredients
  • 1 tablespoon avocado oil, ghee, or cooking fat of choice
  • 1 large yellow onion, diced
  • 1 small red bell pepper, diced
  • Diamond Crystal kosher salt
  • 2 tablespoons tomato paste
  • 4 garlic cloves,minced
  • 2 pounds ground beef (85% lean, 15% fat)
  • 3 tablespoons chili powder
  • 1 tablespoon dried oregano
  • 1 tablespoon ground cumin
  • ¼ teaspoon cayenne pepper (optional)
  • 1 (14.5 ounce) can fire-roasted diced tomatoes, drained
  • ½ cup chicken broth or bone broth
  • 2 teaspoons fish sauce
  • 1 tablespoon apple cider vinegar (optional)
