The rice MUST be cooked before making fried rice. We often get questions about whether it’s better to use freshly cooked rice or leftover cold rice to make fried rice.
Our answer is that it’s totally acceptable to use either! Using leftover rice might be a little easier if you’re a novice at wok cooking, as it has less moisture and will be easier to break up into individual rice grains. But if you didn’t think that far ahead, you can also cook a batch of rice in your rice cooker expressly for the purpose of making fried rice.

Over the years, we’ve posted just about every variation of lo mein. But the beauty of lo mein is that it’s a great dish for cooking up odds and ends from the refrigerator.
We often make lo mein when we have a bunch of random veggies and small pieces of pork, beef, or chicken. Once you master the basic recipe, you can get perfect results with almost any combination.
The overall formula is julienned veggies + sliced protein + noodles.
Once you’re familiar with the overall process, feel free to make substitutions and experiment with different combinations of protein and veggies!

Sesame beef is a Chinese dish of crispy beef, tossed in a lightly sweet sauce with balanced acidity, toasted sesame oil, and sesame seeds.

OPTIONAL ADDITIONS FOR SESAME BEEF:
This recipe has the minimum of what we think is required for a great sesame beef. But there are a few above-and-beyond extras you can add in to suit your own tastes:
* Minced ginger - just before adding the garlic
* Whole dried red chilies - toast in oil just before adding the garlic
* Crushed dried red chilies if you like the heat - toast in oil just before adding the garlic
* Pinch of five spice powder, if you like to have some extra flavour - add to the sauce mixture
* More scallions - some people just love green onions!
On the flipside, I would recommend resisting the urge to add vegetables to this dish, as they will disturb the texture of the sesame beef, introducing water content that will make your beef less crispy.
