Char Siu - Chinese Bbq Pork - Restaurant-Style
Char siu, or Chinese BBQ Pork, is a delicious Cantonese roast meat. Make authentic Chinatown char siu at home with our restaurant-quality recipe! A good char siu recipe has depth of flavor––a salty/sweet contrast with a hint of spice that compliments the pork and allows it to stand alone with just a simple mound of steamed rice and blanched choy sum.

PREP: 10 mins
MARINATING: at least 8 hrs, preferably overnight.

Ingredients
  • 1.4 kg boneless pork shoulder/pork butt
  • (select a piece with some good fat on it)
  • 50 g granulated white sugar
  • 2 teaspoons salt
  • ½ teaspoon five spice powder
  • ¼ teaspoon white pepper
  • ½ teaspoon sesame oil
  • 15 ml Shaoxing rice wine
  • 15 ml soy sauce
  • 15 ml hoisin sauce
  • 2 teaspoons molasses
  • ⅛ teaspoon red food coloring (optional)
  • 3 cloves finely minced garlic
  • 30 ml maltose or honey
  • 15 ml hot water
