Vegetable Fried Rice
This vegetable fried rice recipe is not just for vegetarians! It's an incredibly versatile side dish or light meal that you can adapt to whatever's in your refrigerator.

Ingredients
  • 630 g cooked white rice
  • ½ teaspoon sesame oil
  • 2 teaspoons dark soy sauce
  • 2 teaspoons light soy sauce (or seasoned soy sauce)
  • ½ teaspoon salt
  • ½ teaspoon turmeric (optional, for color)
  • 1 teaspoon MSG (optional)
  • 80 g onion (diced)
  • 80 g carrots (diced)
  • 50 g fresh shiitake mushrooms (diced)
  • 80 g bell pepper (any colordiced)
  • 90 g snow peas (chopped)
  • 1 scallion (chopped)
  • 130 g mung bean sprouts
  • 30 ml vegetable oil (or any neutral oil)
  • 1 clove garlic (minced)
  • ⅛ teaspoon white pepper
  • 15 ml Shaoxing wine

  • 2 eggs
  • ¼ teaspoon salt
  • ⅛ teaspoon white pepper
  • ½ teaspoon Shaoxing wine
  • 30 ml vegetable oil (or any neutral oil)
