Ginny Paterson it’s in my head. 426 ml water, approx 14g fresh yeast, 1 tblsp olive or veg oil. 350g each of Canadian strong bread flour and malted grain flour. I heat water oil and yeast for 2 mins at 37 on speed 2. Add flour and salt and use dough mode for 15 mins. I prove 4 x, the final one in a floured basket. Heat oven to 235 C and put dome in to heat. When final prove is done, l pop it in the dome , slash the top. Cover it up and cook 10 mins, reduce heat to 200 C for 25 mins then take off lid and give it another 10 minutes. Ta da!
Tonight’s Chicken Fried Rice. Worked perfectly and won’t do it any other way now!
Sauteéd onion, garlic, ginger and chopped chicken in a little oil and soy sauce, added two IP cups of long grain rice and two IP cups of water.
Cooked under pressure for 4 minutes on the standard manual setting, 9 minutes NPR, then stirred in frozen peas, chopped spring onion and two eggs. Adjusted seasoning with a further dash of soy sauce and chili oil whilst stirring under low Sauté setting.

Only 2 lts icecream. Used milk chocolate cooking chocolate. Made a salted caramel in thermomix. Used ordinary digestive. Blitzed frozen digestive to crumb.. Made the choc gnache using these quantities but the gnache thermomix instructions. Pour last caramel on when serving..
Heat olive oil and butter. 1 min 100 speed 1. Add onions and sugar. Varoma. Stir. About 20 to 30 mins or until caramalizing. Add red wine and vinigar. Continue cooking until liquid is evaporated (about 30 mins)
Nothing better than a Lobster cooking in a pot!
Lobster Boil or Low Country Seafood Boil
(The layering in this recipe is important. So pay attention. The longer cooking items are on the bottom and help shield the upper items from cooking too fast)
In a 6 qt pot
Trivet in the bottom
Around the edges place 5 half ears of corn
In the middle of the corn put ¾ lb of baby potatoes
Throw in a roughly chopped onion
Sprinkle 1 Tbsp. Old Bay and 1 Tbsp. Sea salt
Place lobster (1 1/4 lb) on top
On each side of the lobster there should be room for ½ lb large shrimp (FROZEN)
On the other side ½ lb big scallops (FROZEN)
1 kielbasa ring (lop that in half and fit into pot
Pour a 12 oz can of beer (I think wine or broth would be just fine too.)
1 Stick of butter (Just plop that right on top there)
Cook for 2 min with a 2 min NPR (that time worked out really good)

Hi Sam. I made the sauce by putting 1oz butter.. 1 oz flour and 250 ml of skimmed milk and juice of half lemon in jug... 6 mins 90 speed 4. Then put in a handfull of parsley speed 8 for few seconds. (Left in jug cos I have 2!) I put the potatoes in the basket. 1 ltr of water in jug (I put boiling water but I don't know if that's right!!!) The salmon I put on wet parchment paper in bottom of varoma and squeezed lemon and salt and pepper. In top of varoma I put rest of veg (courgettes, carrot sticks, broccoli and asparagus) 20 mins speed 4 on varoma.. put sauce back on to heat while I was dishing up. It was really easy!!! Hubby wants me to show him next time! He doesnt cook at all But I reckon he could do that easily!! It was lovely!!
2 slice bread crumbed
1 small onion and 1 garlic clove sauted
Tbls fresh parsley
Tbls fresh basil
Tsp oregano
2 tsp Worcester sauce
Finely chopped left over chicken
2 eggs
Salt and pepper
I blitzed the bread.. then the herbs then the chicken.. the onion and garlic. Saute onion and garlic speed 1 3 mins then mixed all together (not breadcrumbs) dip in egg.. roll in breadcrumbs. Made into 4 patties and cooked in airfryer for 12 mins. Made this before just adding everything and airfrying .. try putting breadcrumbs on after next time
Another fish dinner done in thermy. Cod in a tomato sauce with peas and jacket potato done in air fryer. Sauce cooked first in thermy. 2 clove garlic 7 seconds speed 8. Olive oil and 1 small onion. 5 seconds on 41/2 . 3 mins 100 sp 1. Add several tomatoes picked from the garden. Juice of a lemon. Handful of parsley and thyme. 8 mins 100 speed 3. Cod in varoma on wet parchment with lemon and seasoning. Peas above. 1 ltr boiling water 20 mins on speed 1.. 100
