Ginny Paterson it’s in my head. 426 ml water, approx 14g fresh yeast, 1 tblsp olive or veg oil. 350g each of Canadian strong bread flour and malted grain flour. I heat water oil and yeast for 2 mins at 37 on speed 2. Add flour and salt and use dough mode for 15 mins. I prove 4 x, the final one in a floured basket. Heat oven to 235 C and put dome in to heat. When final prove is done, l pop it in the dome , slash the top. Cover it up and cook 10 mins, reduce heat to 200 C for 25 mins then take off lid and give it another 10 minutes. Ta da!
