I have been craving a tasty gnocchi dish lately. The only problem was I didn’t want it to be too high in points. So I started thinking about what I could do to make a gnocchi dish that I liked, while keeping it low in points. That’s when I came up with this gnocchi with chicken and spinach. It has a cream sauce, gnocchi, chicken and spinach. Between the gnocchi and chicken it is a very filling dish.

Made a smaller batch
Used more chicken breast and less spaghetti
Used Campbell's Healthy Request Cream of Chicken Soup
Substituted reduced fat cheddar cheese and used less

I had some leftover ground beef that I wasn’t sure what to do with. It was lunch time and I wanted a sandwich.
I came up with this Ground Beef Grilled Cheese. It’s kind of a cross between a patty melt and sloppy joe.
It was filling and very tasty!
