NOTE: Dont chop walnuts too fine or just break by hand possible......Make sure you don't grate the carrot finely, or the cake will be too 'juicy' -keep it a course grate. Also, chop the walnuts into small chunks, definitely not like breadcrumbs.
160 degrees Celsius is high enough in fan-forced ovens and it could take anything from 60-90 minutes, depending upon your oven, so check with a cake tester regularly and add only 5 minutes at a time to perfect according to individual ovens. Make sure you record your times for the future. Enjoy!!
