I am not lying when I say these are a little temperamental, but I tried them multiple times once I got the recipe to this point, and got a good result every time. The tricky part is the timing. If you do not let them rest long enough they will explode and fall apart in the hot liquid. If they rest too long they won’t puff up and will be stodgy. So the timing is critical, and I am working on refining the recipe to remove this timing issue.

If you usually buy shredded mozzarella from the store, check for any starches that are typically added to stop the shreds from sticking together. I recommend buying a block of mozzarella and grating it yourself at home to avoid the whole starch filler issue altogether. Same goes for the shredded Cheddar.
You can lower the fat by using fat-free or low-fat cottage cheese, and / or your preferred nut milk instead of the heavy cream.
1. You will need a sugar substitute that caramelizes. Stevia will not work. Erythritol, monk fruit and allulose are all great for caramelizing.
2. Keep your eye on this! Check at 30 minutes in, then continue checking every 10 minutes. It can go from browned to burnt in a short period.
3. Do not alter any ingredients and make sure you use the correct amount. Especially water. Don’t be alarmed if you think there is too much. The water will be mostly boiled off in the oven and it also helps the caramelization.
