A great way to use herbed butter is to put it underneath the skin of a whole chicken, spread it out by pressing your fingers on top of the skin. Then, rub the remainder of the herbed butter on the top, add some salt and pepper, then pop in the oven.
Ingredients
  • ½ cup (1 stick) unsalted butter, softened to room temperature
  • ¼ cup finely chopped mixed herbs (such as basil, thyme, sage, parsley, dill, chives, tarragon, oregano, marjoram or rosemary)
  • 1 teaspoon coarse sea salt
  • 1 teaspoon freshly ground black pepper
