This recipe calls for 1 part finely chopped chives or scallions to 2 parts butter. This gives a lovely but strong onion flavor. To tone it down a bit, try 1 part chives/scallions to 3 or more parts butter.

Delicious served on steak.

Another great way to use herbed butter is to put it underneath the skin of a whole chicken, spread it out by pressing your fingers on top of the skin. Then, rub the remainder of the herbed butter on the top, add some salt and pepper, then pop in the oven.
