I soaked in salted water with vinegar and drained and dried. Dusted with self rising flour. Dipped in coconut milk with hot sauce and fish fry. Then again in self rising flour. Fry.
I just want to reduce salt in a fully cooked ham. so I heat water to 180 put ham in. Bring heat back to 180. Turn off let sit for 30 min. Remove from frig next day for one hour to warm up some. Then glaze

TO MAKE AHEAD: Dough can be refrigerated for up to 2 days or frozen for up to 1 month. Let dough stand at room temperature for 30 minutes before shaping. Let frozen dough thaw overnight before proceeding with recipe. Cooled cookies can be stored at room temperature for up to 2 weeks in airtight container.
1/2 cup masa harina
1/4 cup medium grind cornmeal
Enough water to make a cohesive but not wet dough (maybe around 1/2 cup)
1 Tbsp coarse sea salt
Mix all ingredients to get a dry, cohesive dough which will split easily around the edges when flattened. Roll out to a thickness no more than 2mm. Unfortunately, the thin dough is fragile and small pieces will break off but they taste just as good. I sprinkled more coarse salt over the top and rolled it right into the dough.
Cut the dough into chips. I used a 5 wheel pasta cutter to cut the chips but it would slightly pull the dough while rolling, breaking off even more small pieces. A long flat knife or dough/bowl scraper edge might do better, or even a sharp paring knife carefully drawn through the dough.
Deep-fry in 350°F oil until golden brown. I had some thicker pieces that more chewy than crunchy and I considered putting those into the oven to drive off more moisture but there weren’t enough to justify heating up the oven.
