I love having formulaic soup recipes that I can use when I have a refrigerator full of produce; it’s especially true as I “clean eat” my way through the month, because much of it is already prepared. Feel free to change it up as you wish, using whatever you want from each category; these ratios should keep it balanced. Note: Ingredients like kale fall under leafy greens rather than brassicas; think more in terms of cooking time than category if you’re confused. Also, this recipe can easily be doubled. If you don’t have something from one category or want to make this simpler, feel free to leave it out; just make up for the volume in another category. If you’re eating beans, they would be great in here, too.
