This gravy is made with brown rice flour instead of wheat flour. The great thing about using rice flour instead of wheat flour for thickening is that it doesn't form lumps like wheat flour often does. You just sprinkle it over the top of a hot liquid, stir it in and it thickens nicely without any lumps.

This is a higher-fat sauce because of the peanut butter. However, I have recently discovered PB2, by Bell Plantation. This stuff is amazing! It's basically powdered peanut butter, with 85% of the fat removed. You mix it with water and use as you would regular peanut butter. You can't tell the difference. Please note, this does not make it a fat-free sauce. It is still calorie dense, so use sparingly if weight loss is your goal.
Lemon Dill Dressing has a bright fresh tangy flavor. It is creamy and so fresh tasting. Made with ingredients like silken tofu, Dijon mustard, fresh lemon juice, capers, apple cider vinegar and of course dill. It can be a salad dressing or a dip.

While the quinoa is boiling, make the paleo granola by toasting 1 cup of mixed and chopped nuts in a pan with a shot of coconut oil, salt, and cinnamon. This is a grain free recipe for granola and sweetened with maple syrup, so it’s paleo. After 5 minutes add the maple syrup and cook one more minute. Once the granola cools down it will harden and you can break it up.
To finish the break bowl, stir in 1-2 tablespoon of coconut cream, chia seeds, granola, yogurt, and fruit. Enjoy!

“We love this recipe so much,” write Ann and Jane Esselstyn in their cookbook Be a Plant-Based Woman Warrior. “And since it has changed in small, nuanced ways over the years, we continue to refine it in our cookbooks. This recipe uses more onion, more mushrooms, and no
alcohol. The flour is also optional as Jane notes she often accidentally forgets to add it and it still turns out delish (though Ann proclaims the flour is a must!).”
