Wanted moussaka this week, CBF actually making moussaka (who has time for béchamel on a weeknight!?) so I further hacked this;
2 aubergines, thickly sliced
2 potatoes, peeled and sliced
1 pack lamb sausages, casings removed
1 (small) tin/jar tomato paste/chutney
Some cream/crème fraiche/sour cream/something creamy
Parmesan to top
Season and grill aubergines.
Meanwhile, microwave (yes, I said it) sliced potatoes.
When both are cooked through, layer Tom paste/chutney, aubergine, potato, cream, sausage meat and repeat until you run out of ingredients.
Then top with grated parm and bake for 20-30mins until the lamb is cooked and everything is bubbling. Yum!!!
Super easy and yummy I used kumara in place of pumpkin and roasted them in the air fryer then roasted the chorizo. Threw in whatever salad vege we had on the night and used up the last of a creamy dressing in place of balsamic. YUM!!

Quick and easy to cook up and even better after a day in the fridge.
I only used 3 medium potatoes and it only made 3 portions. I also added a punnet of mushrooms to bulk up the vege and used ½ tsp Kashmiri chili powder in place of the fresh chilies and it was just the right amount of heat.
If eating the night of it might need some sugar to help cut through the bitter tomato flavour, but it mellows when left to sit.
It would be even better if finished with cooking cream and served with roti.
Yum! Didn’t bother single layering them, 3 zucchinis dumped all in basket, toss for or five times until mixed golden brown. I just did a few good grinds of seasoning written amount of salt is too much. Yum and super easy!
I made this with brown nice (big mistake! Took forever), corn in place of peas and grated zucchini in place of spinach. It was ok but needed a lot of seasoning and it was better with cheese or mayo stirred in with everything bagel seasoning.
Yum!! I used pork. Excellent way to use up feta, I also stashed chopped up sad looking mesclun that was past its best, in place of the spinach. Served with the tzatziki and summer salad was yum, but also great for snacking on with a little mayo.
Yum!!! Def doesn’t need a ½cup oil if the tomatoes are super juicy, like my cherry Tom’s were, just a good glug was HEAPS! And no need to do batches, i chicken everything in at once (including whole toasted almost and chunks of parm) and blitzed on high until it was smooth enough.
Update: THIS DOES NOT KEEP WELL, needs to be eaten fresh.
YUM!! This was so much better than I anticipated. I used a scant cup of mixed antipasti but easily could have taken more. I also added a few grinds of salt and pepper as no seasoning is mentioned. Delicious!
I made a LOOSE version of this with salad, cherry tomatoes, red onion, feta and basil. Tried to grill the gnocchi in a fry pan. Absolutely stuck to everything and was half burnt and half uncooked. If trying again, boil, then drain and fry with lots of butter and oil.
