Congee is a traditional Chinese porridge that incorporates the slow long cooking of rice to break down its starches into the water or broth it cooks in. This process develops an elixir that's phenomenal for your immune system and warms your gut. It's easily digested and assimilated, tonifies (increases available energy) the blood and the Qi, harmonizes the digestion and soothes inflammation. It's also insanely delicious and soothing.
I've played with some different recipes, you can make it sweet or savory. Here's a single serving recipe (this is a full meal) that you can multiply based on how many people you're feeding or how many days you'd like to cook for all at once. You can add any extra protein on top, flavored oils, seeds, sauteed veggies, etc... The sky is the limit on what you can prepare. But I'll share with you what I make for Zach and me, that we're both obsessed with.
