Ingredients
- 1 lb ground beef (ideally grass fed/finished)
- ⅓ c oat flour (you can put rolled oats in the blender to make a fine flour)
- 1 packet Collagen bone broth mixed well with ¼ cup of water (use ¼ c of plant based milk if you don’t have the bone broth)
- 1 tbsp low sodium gluten free soy sauce
- 1 tbsp chopped parsley
- ½ tsp sea salt
- ⅛ tsp garlic powder
- ⅛ tsp black pepper
- 1 egg (can use Bob’s Red Mill egg replacer, flax egg works too although I prefer the Bob’s)
Steps
- Preheat oven to 400.
- Mix it all ingredients together well in a bowl.
- Prepare your cast iron (or other baking dish) by pouring some of your favorite tomato sauce about halfway up the side.
- Drop your meatballs in (about 2 to 3” balls) gently.
- Bake for about 17 mins (give or take a couple depending on your oven). If you want the tops to be extra crispy, you can pop on your broiler for a minute or two at the end.
- If you eat cheese, you can add some mozzarella or Parmesan on top right before broiling.
- This is seriously a delicious and super easy meal to prepare.
