Henry Ross official Key West version
Ingredients
  • 1 graham cracker pie crust
  • 2 large eggs
  • ¼ c sugar
  • 1 can condensed milk
  • ½ c key lime juice
  • ⅛ tsp lime zest
  • ¼ tsp cream of tartar
Steps
  1. Preheat oven to 325°.
  2. Separate eggs.
  3. Put whites (with NO yolk) in medium bowl and yolks in large bowl.
  4. Beat whites and cream of tartar at highest speed till foamy.
  5. Gradually beat in sugar.
  6. Continue beating till mixture is firm, and set aside.
  7. In separate bowl, beat yolks until smooth.
  8. Slowly beat in condensed milk, lime juice and zest.
  9. Gently fold in 2 tbsp meringue mixture.
  10. Pour filling into pie crust.
  11. Top with remaining meringue mixture.
  12. Bake for 10 minutes or until meringue is lightly browned.
  13. Garnish with lime slices.
  14. Chill before serving.
