Ingredients
  • cabbage - 1 medium, red or green
  • onion - 1 small
  • coconut oil - 2 Tablespoons
  • bacon - 4 medium slices
  • balsamic or apple cider vinegar - 1 Tablespoon
  • cinnamon - 1 tsp, ground
  • salt - ΒΌ tsp
Steps
  1. Slice the onion and cut the bacon into strips.
  2. Heat 1 T coconut oil in a large pan over a low/medium heat and add the onion and bacon. Fry gently until the onion is tender and the bacon is just cooked - about 4/5 minutes.
  3. Remove the outer leaves and the core from the cabbage and slice finely.
  4. Add 1 T coconut oil to the casserole dish along with the sliced cabbage, balsamic or apple cider vinegar, salt and cinnamon. Stir well to combine.
  5. Turn the heat to low and cover the dish. Cook on low for 45 minutes, stirring frequently to prevent sticking. The cabbage should be tender and sweet.
