Zoodles Pad Thai With Spicy Peanut Sauce

Ingredients

  • 4 small Zucchinis (approx 550g)
  • 1 medium Red Bell Pepper
  • 2 Garlic Cloves
  • ½ bag Bean Sprouts (200g)
  • ¼ package Blue Menu Tofu - Extra Firm (88g)

  • 2 tbsp PB2
  • 1 tbsp Hoisin Sauce
  • 2 tsp Soy Sauce
  • 2 tsp Sriracha
  • ¼ tsp Sesame Oil
  • ½ tsp Grated Fresh Ginger
  • 2 tbsp Water
Steps
  1. Spiralize your Zuchinni to make Zoodles. Set aside on paper towels.
  2. Slice Red Pepper, mince Garlic and grate Ginger. Set aside.
  3. Prepare your sauce by mixing all ingredients in a bowl. Set aside.
  4. Add Zoodles to pan, cook using medium heat for 2 to 3 minutes or until warm and tender (but not soggy).
  5. Transfer Zoodles to strainer, and thoroughly strain water. Take away excess water using paper towels. Set aside. I like to add salt to it before straining it, I find it helps.
  6. Add Red Pepper and garlic to the same pan you used to cook the Zoodles and cook using medium heat for 5 minutes, then add Tofu & Bean sprouts and cook for 2 more minutes.
  7. Put Zoodles back in pan with the rest and pour the sauce in.
  8. Serve & enjoy!
