Zoodles Pad Thai With Spicy Peanut Sauce

Ingredients
- subheading: Ingredients :
- 4 small Zucchinis (approx 550g)
- 1 medium Red Bell Pepper
- 2 Garlic Cloves
- ½ bag Bean Sprouts (200g)
- ¼ package Blue Menu Tofu - Extra Firm (88g)
- subheading: Sauce :
- 2 tbsp PB2
- 1 tbsp Hoisin Sauce
- 2 tsp Soy Sauce
- 2 tsp Sriracha
- ¼ tsp Sesame Oil
- ½ tsp Grated Fresh Ginger
- 2 tbsp Water
Steps
- Spiralize your Zuchinni to make Zoodles. Set aside on paper towels.
- Slice Red Pepper, mince Garlic and grate Ginger. Set aside.
- Prepare your sauce by mixing all ingredients in a bowl. Set aside.
- Add Zoodles to pan, cook using medium heat for 2 to 3 minutes or until warm and tender (but not soggy).
- Transfer Zoodles to strainer, and thoroughly strain water. Take away excess water using paper towels. Set aside. I like to add salt to it before straining it, I find it helps.
- Add Red Pepper and garlic to the same pan you used to cook the Zoodles and cook using medium heat for 5 minutes, then add Tofu & Bean sprouts and cook for 2 more minutes.
- Put Zoodles back in pan with the rest and pour the sauce in.
- Serve & enjoy!
