Ingredients
  • Banana Nut Muffins
  • I've finally found a really good, really simple recipe that doesn't use egg replacer. I don't know why, but I just don't like dealing with egg replacer. I just made these and they turned out SO GOOD. Really moist and sweet and good. No-one will notice the egss are missing, I promise. It tastes just like the banana nut bread my mom used to make! :)

  • 1 ½ cups flour
  • ½ cup dry sweetener (I used regular beet sugar)
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • ¾ cup oat bran
  • ½ cup chopped walnuts
  • 2 bananas, smashed well (smash BEFORE adding)
  • ⅓ cup olive oil (yeah, it's a lot)
  • 1 tsp vanilla extract
  • ⅔ cup soy milk (I used Plain Silk)
