Orecchiette with Smoked Sausage and Cheese (IP)
Adapted from this original recipe:  One (Instant) Pot Penne Pasta

Ingredients
  • 1 pound smoked sausage, cut into bite sized slices
  • 1 medium onion, diced
  • 6 cloves garlic, minced
  • 1 lb orrechiette pasta, uncooked
  • 3 cups chicken stock
  • 1 (10 ounce) jar roasted red peppers (drained, but KEEP liquid)
  • 2 cups shredded Monterey Jack cheese
  • ½ cup Parmesan cheese
  • 1 cup shredded Mozzarella cheese
  • 1 to 2 cups finely chopped fresh spinach
Steps
  1. Add sausage and onions to Instant Pot and saute until there are brown bits on the bottom of pot.
  2. Add garlic and drained red peppers. Saute for 1 minute.
  3. Deglaze pot with chicken stock.
  4. Add pasta and red pepper liquid.
  5. Stir to combine. Secure lid and cook 5 minutes on high pressure with a 1 minute natural release.  Remove lid, add cheeses and chopped spinach. Stir until cheese is melted and spinach is wilted.
