Crispy Tofu Salad with Miso Tahini Dressing
Ingredients
  • Prep Time: 20 MINUTES Cook Time: 10 MINUTES Total Time: 30 MINUTES Servings: 4

  • 1 block tofu, firm or extra firm
  • 1 Tbsp toasted sesame oil
  • ½ tsp tamari (or soy sauce if not GF)
  • ½ tsp garlic powder

  • 1 heart romaine lettuce, chopped
  • 4 radishes, thinly sliced (I used a mandoline slicer)
  • 1 cup snap peas
  • 1 cup cucumber, chopped (I used 2 mini cucumbers)
  • 1 cup carrots, chopped (I used 2 med-sized carrots)
  • To garnish (optional): sliced green onion, sesame seeds, black pepper
  • subheading: Dressing:
  • ¼ cup tahini
  • 1 Tbsp toasted sesame oil
  • 3 Tbsp rice wine vinegar
  • 2 Tbsp miso paste
  • 1 tsp garlic powder
  • ½ tsp ground ginger
  • 2 Tbsp hot water
