Chorizo in Red Wine
Chorizo comes in many different varieties. Smoked, unsmoked, fresh and cured. If possible, use fresh spicy chorizo, the size of breakfast sausages. If not, make sure to buy type you can slice into 1/2-1" rounds.

Ingredients
  • 1 TBS EVOO
  • 10 oz small, spicy fresh chorizo sausages, cut into ½ to 1" rounds
  • ½ cup red wine
  • Crusty bread to serve
Steps
  1. Put EVOO in a heavy-based frying pan/skillet and heat until smoking.
  2. Add the chorizo and cook for 1-min.
  3. Reduce the heat, add the wine and cook for 5-mins.
  4. Transfer to a serving dish and set aside to develop the flavors.
  5. Serve with warm, crusty bread.
