Healthy Lunch Box Muffins (Gluten Free)
Ingredients
  • ½ cup grated zucchini
  • ½ cup grated carrots
  • 2 cups uncooked rolled oats
  • ¼ cup honey* or maple syrup
  • 2 very ripe bananas (the riper, the sweeter they will be)
  •  
  • ¼ cup coconut oil, melted (or any neutral tasting oil)
  • ½ tbsp pure vanilla extract
  •  
  • 1 tsp baking soda
  • 1 ½ tsp apple cider vinegar
  • ¼ tsp sea salt
  • 1 tsp ground cinnamon
  • ¼ cup milk of choice (dairy or non-dairy milk will both work)
