Sautéed Shrimp with Lemon and Caper Cream Sauce on Angel Hair Pasta
TIME: 1 hour. But SO WORTH IT! From the Olive Garden e-newsletter. This is one of our favorite pasta dishes. The reductions take a while but it allows the shrimp to soak up all the flavors and become little flavor bombs. I don't even usually like shrimp but I love this!

Ingredients
  • 16 oz angel hair or spaghettini pasta, cooked
  • ½ c olive oil
  • 12 oz salad shrimp
  • 2 tsp chopped garlic
  • ¼ c capers
  • ¾ c white wine or water
  • 3 c light or heavy cream
  • 1 c lemon juice
  • White pepper to taste
  • Salt to taste
  • 2 tsp chopped fresh parsley (optional)
Steps
  1. In a heavy bottom sauté pan heat the olive oil and sauté the shrimp for 2 minutes.
  2. Add garlic and capers and cook 30 seconds.
  3. Add wine and lemon juice and reduce by half.
  4. Remove the shrimp to a plate.
  5. Add cream and reduce by ⅓.
  6. Season sauce with salt, white pepper, and parsley.
  7. Toss the cooked angel hair pasta and meat to coat with the sauce.
