Ingredients
  • 2 tbsp extra-virgin olive oil
  • ⅔ cup freshly grated Parmesan cheese
  • 2 tsp dried thyme
  • 1 tsp fine sea salt
  • ½ tsp garlic powder
  • ¼ tsp freshly ground black pepper
  • 5 medium red or Yukon Gold potatoes, sliced ⅛ inch thick (I used the mandolin side of my cheese grater)
  • ¼ cup (½ stick) melted butter
