  • 3 tablespoons tamari or soy sauce plus more as needed
  • 1 tablespoon unseasoned rice vinegar
  • 1 tablespoon brown sugar
  • 2 teaspoons minced or grated peeled fresh ginger
  • 2 cloves garlic minced
  • 5½ cups / 700g Basic Soy Curls
  • Crushed red pepper flakes for sprinkling optional
  • 4 cups cooked white or brown rice or cooked udon or soba noodles for serving
