OOLICHAN'S SUGGESTION I like using flexible baking sheets (like the Silpat Non-stick Baking Mat), when making crackers. These baking sheets allow you to roll the dough out and cook with as well.

These crackers are great with home-made soup. On their own, they are good with soft butter spread on top, and for a real taste kick replace butter with Dr. Bruno Bros. Cheddar and Horseradish with Smoky Bacon spread. Yum.

Ingredients
  • 2 C almond flour
  • 1 C flax meal (use golden if you want a lighter colored cracker)
  • 2 tsp onion powder
  • ½ tsp garlic powder
  • ¼ tsp salt
  • ½ to 2 tsp coarse black pepper (depending on the amount of peppery flavor desired)
  • 2 T. Extra Virgin Olive Oil
  • 2 eggs, beaten (or 6 T egg whites)
  • 1 T sesame seeds (opt)
Steps
  1. 1. Preheat oven to 350º.
  2. 2. Measure all dry ingredients into Cuisinart.
  3. 3. Add the two eggs and olive oil and process until the mixture is moist throughout and thoroughly combined
  4. 4. Place parchment paper over dough and roll into a rectangle approx 1 1/6" thick
  5. 5. Score into 48 crackers (8 x 6) with a straight edge knife. Then sprinkle with sesame seeds and rollover the crackers one more time with the rolling pin to push the seeds into the dough.
  6. 6. Pop into preheated oven and bake for 15 to 20 minutes, depending on how thin you rolled the crackers. They will brown around the edges of the pan faster and you may have to remove outer crackers as they bake. Don’t over brown as flax products can get a burned taste real fast if over-browned.
  7. 7. Cool and break apart along score lines.
  8. 8. When thoroughly cool, store in tin or ziploc bag at room temperature.
Notes
  • VARIATIONS: Any herb(s) you like along with onion and garlic powder, any combination of grated cheeses with or without onion/garlic powders, rosemary and onion powder, just onion powder, just garlic powder, onion powder and cayenne, onion powder and smoky chipotle powder and any combination of these things that suits your fancy.
