Homemade Keto "Shake 'n Bake"
Ingredients
  • 4 c. ground pork rinds
  • 1 Tbsp salt
  • 1 Tbsp paprika
  • 1 T celery salt
  • 1 tsp ground black pepper
  • ½ tsp garlic salt
  • ½ tsp minced garlic
  • ¼ tsp minced onion
  • 1 pinch dried basil
  • 1 pinch dried parsley
  • 1 pinch dried oregano
Steps
  1. Heat oven to 400°F.
  2. Moisten meat of choice with water, 1 egg (beaten), or avocado oil.
  3. Shake chicken or chops, 1 piece at a time, with coating mix in shaker bag. Discard bag and any remaining coating mix when done.
  4. Bake on foil-covered rimmed baking sheet OR Air Fryer until done. (see chart below) Do not cover or turn meat while baking in oven.
  5. Chicken can be served immediately once cooked. Let pork chops stand 3 min before serving.

  9. 2 lb. boneless skinless chicken breasts (6 to 8 breasts) = 20 min

  12. 2½ lb. bone-in chicken pieces (about 6 pieces) = 22 min, flipped halfway
  13. 2 lb. boneless skinless chicken breasts (6 to 8 breasts) = 10 min, flipped halfway
  14. 6 to 8 (½-inch thick) bone-in or boneless pork chops = 10 min, flipped halfway
Notes
  • FOR CHICKEN: minimum internal temp of 165°F
  • FOR PORK CHOPS: minimum internal temp of 145°F
