Ingredients
  • 2 pounds (907g) Brussels sprouts
  • ¼ cup (60ml) grapeseed or canola oil, divided
  • Kosher salt and pepper, to taste
  • 2 tablespoons fish sauce
  • 2 tablespoons fresh lime juice (about 1 lime)
  • 1 large garlic clove, finely grated
  • 1 ½ teaspoons fresh ginger, peeled and finely grated
  • Pinch of crushed red pepper
  • 1 cup (70g) shredded red cabbage, packed
  • 3 scallions thinly sliced on the diagonal
  • 1 medium carrot, peeled and julienned
  • ½ Fresno pepper, very thinly sliced
  • ½ cup (10g) cilantro, leaves and tender stems, packed
  • ½ cup (10g) basil leaves, torn, preferably Thai basil, packed
  • ½ cup (125g) creamy natural peanut butter, unsalted
  • Salted roasted peanuts, chopped (optional garnish)
  • Lime wedges, for serving (optional garnish)
