"Vegan French toast... I love it as much as regular French toast and it's really easy to do. Simply mash a ripe banana until it's liquid, add a splash of plant milk and a tsp each of ground chia and flax seeds and a dusting of cinnamon and mix well. Leave for half an hour for the ground seeds to activate and then just coat your bread (I use gluten free) in the mixture and fry on each side with a little coconut oil. (It will take much longer to brown that the traditional egg based, but just persevere) Simple and delicious! "
