Ingredients
  • Crust
  • 5 oz animal crackers
  • 3 tbsp packed brown sugar (light or dark)
  • 1 pinch salt
  • 4 tbsp unsalted butter (½ stick); melted and cooled slightly
  • Filling
  • 2 oz cream cheese (at room temperature)
  • 1 tbsp grated lime zest
  • 1 pinch salt
  • 14 oz sweetened condensed milk (1 can)
  • 1 large egg yolk
  • ½ cup Key lime or fresh lime juice (about 4 limes)
  • ¾ cup sweetened shredded coconut, toasted (optional, for garnish)
