Yummy raspberry crumble layer bars!
Ingredients
  • 4 c flour
  • 2 tsp baking powder
  • ¼ tsp salt 4 sticks (2 c) unsalted butter
  • 4 large egg yolks
  • 2 c granulated sugar
  • Raspberry preserves
  • Confectioner’s sugar
Steps
  1. Preheat oven to 350°.
  2. Whisk flour, baking powder and salt together in bowl and set aside.
  3. With mixer, beat butter on high speed till fluffy.
  4. Add yolks and sugar and beat until mixture is light.
  5. Add dry ingredients and beat on low only until incorporated.
  6. Cut dough in half, shape each in ball, wrap in plastic and freeze until firm (30 minutes).
  7. Use cheese grater to grate half of dough into 9x12 baking pan.
  8. Pat gently and then spread on preserves.
  9. Grate other half of dough on top and press lightly.
  10. Bake for 40 minutes.
  11. Dust with confectioner’s sugar while still hot.
  12. Cool, then cut into squares.
