Cheesey potato bake

  1. So easy. All I did was soak a handful of organic raw cashews in hot water for about 10 minutes, drain off the water, add 2 or three teaspoons of low salt Massel vegetable stock powder. about ¾ of a cup of bonsoy soymilk, half a red onion chopped finely along with 1 carrot chopped finely. Both the carrot and the onion were nuked in the microwave for a couple of minutes to soften, then into the pyrex jug with the cashews and soymilk (and some water). Blended well with a decent stab mixer. Placed thinly sliced raw potato (skin on) in layers in a pyrex baking dish, alternating with layers of the 'cheesey' sauce. Covered dish with alfoil and baked for 35 minutes in an oven pre-heated to 200 degrees Celcius. Uncovered after that and allowed to crisp up a bit for about 6 minutes. Easy as. So good it's already gone!
