Old-Fashioned Beef Stroganoff

Ingredients
- 1 lb tenderloin or sirloin steak
- 16 to 18 oz egg noodles, rotini or cooked rice
- 2 tbsp shortening or butter
- 1 onion, sliced
- 1 clove garlic, minced
- 1 cup sour cream
- 1 can cream of mushroom soup
- 2 tbsp ketchup
- ½ tbsp Worcestershire sauce
- 3 oz can mushroom pieces (undrained) or 4 oz fresh + ½ c beef broth (see Notes)
Steps
- Heat water for noodles and cook while doing the below.
- Remove any fat and gristle from the steak, pound to ½ inch thickness and cut into strips ½ inch thick by 2 inches long. Season with salt and pepper.
- Sauté onions and garlic in medium high (or medium if non-stick) pan with shortening until onions start to brown. Remove from skillet. In same skillet, cook meat until light brown.
- Add sour cream, soup, ketchup, Worcestershire sauce and mushrooms, cover and simmer for 15 minutes.
- Stir onions into the sauce. Heat to boiling, stirring constantly. Boil and stir one minute.
- Serve sauce over noodles.
- subheading: Alternate method, cooking meat separately:
- Heat water for noodles and cook while doing the below.
- Remove any fat and gristle from the steak, pound to ½ inch thickness and cut into strips ½ inch thick by 2 inches long. Season with salt and pepper.
- Mix sour cream, soup, ketchup, Worcestershire sauce and mushrooms in a pot and simmer for 15 minutes while doing the pan cooking.
- Sauté onions and garlic in medium high (or medium if non-stick) pan with shortening until onions start to brown. Remove from skillet.
- Add a bit more shortening to the pan and sear meat in pan to desired doneness, about 4 minutes for medium. Set aside.
- Stir onions into the sauce. Heat to boiling, stirring constantly. Boil and stir one minute.
- Mix meat and sauce, pour over noodles and serve.
Notes
- Instead of canned mushrooms you can use 4 oz fresh mushrooms, washed, trimmed and sliced. Add ½ c beef broth to the sauce before simmering, and add the fresh mushrooms along with the onions to the sauce at the end, just before the 1 minute boil.
