you can add whatever flavourings you like instead of the smoked paprika. You can turn it into tartare easily or add a little bit of hot sauce/kimchi instead.
Also delicious with wild garlic blended in!

Ingredients

  • (a Demuths Cookery School recipe!) INGREDIENTS
  • 50g gram flour besan
  • 225ml water
  • ½tsp smoked paprika (if you want it smoky, leave it out if not)
  • 2tbsp white wine/cider vinegar/lemon juice
  • 2 to 3tsp dijon mustard (leave it out if you don’t have it)
  • 1 clove garlic (or ½tsp garlic powder)
  • 150ml sunflower/veg oil (*in the stories she said to weight the oil)
  • salt **this can be adapted to be any flavour you like, add wild garlic instead of a garlic clove. add some cajun spices/chipotle paste for a spicy mayo. add capers/shallot/gherkin for a tartare. Harissa/kimchi/pesto can all be added too- go wild!**
