Ingredients
  • 2 cans Amy’s Black Bean Chili
  • 2 c cooked rice (Uncle Ben’s Ready Rice is quickest)
  • 1 c shredded cheddar
  • Optional toppings - sour cream, scallions, tortilla chips
Steps
  1. Mix rice and chili in medium bowl.
  2. Microwave for 5 minutes or until hot, stirring halfway through.
  3. Add cheese and microwave for 1 more minute.
