Tastes like my favorite Hellman's mayonnaise, but without the unhealthy vegetable oil. Also, almond oil is delicious as well. And to the almond, macadamia or avocado oil, you can add about 2 Tablespoons olive oil to make up the 3/4 cup.

And I use a food processor with this recipe, making sure to add the oil very slowly.

Ingredients
  • 1 large egg yolk
  • ¼ teaspoon salt
  • ¼ teaspoon Dijon mustard
  • 1 ½ teaspoon lemon juice
  • 1 teaspoon white vinegar
  • ¾ cup macadamia nut oil or avocado oil
