Crispy Hong Kong Chow Mein

  • 1 lb protein (chicken or shrimp)

  • ½ tsp white pepper
  • 2 tsp sesame oil
  • ¼ tsp salt
  • ½ tbsp cornstarch

  • 2 cups baby bok choy
  • 1 cup oyster mushroom
  • ¼ cup sliced onion
  • 2 stalks scallion cut into 2" pieces
  • ¼ cup sliced carrot into 1" disks
  • 2 cloves garlic, chopped
  • 10 oz fresh chow mein noodles
  • ½ cup neutral oil for frying
  • 3 cup chicken stock
  • 2 tsp white pepper
  • ½ tsp msg
  • 1 tsp sugar
  • 2 tbsp Shaoxing wine
