Green Thai Curry (Meal-Prep)

  • 600 g extra firm tofu, diced in cubes
  • 4 tbsp green curry paste
  • 1.5 cup vegetable stock
  • 1 tbsp kaffir lime leaves (optional)
  • 1 tbsp tamari
  • 2 carrots, diced
  • 1 large zucchini, diced
  • 1 head broccoli, diced
  • 1 can coconut milk (400ml)
  • 1 lime, chopped in quarter
  • 1 handful coriander
  • 4 tbsp cashews
  • 2 red chili, diced (optional)
