Zucchini donuts

  1. Zucchini Bread - yields 1 loaf or 8 donuts
  2. 1 ½ cups whole wheat flour  (I used whole wheat pastry)
  3. 2 tsp baking powder
  4. 1 tsp ground cinnamon
  5. ½ tsp ground ginger
  6. ½ tsp ground nutmeg
  7. ½ tsp salt
  8. 1 flax egg (or other substitute)
  9. ½ cup light brown sugar, or maple syrup *see note*
  10. 5 TBS unsweetened applesauce
  11. 1 tsp lemon juice
  12. 1 tsp vanilla extract
  13. Up to 4 tbsp water, as needed.
  14. 1 ½ cups shredded zucchini
  15. Directions: Preheat 350 F
  16. Mix flour, baking powder, spices and salt together.  Make Flax egg and mix it with the sugar, applesauce, lemon juice, and vanilla. Pour wet into dry, add zucchini and stir until just combined.  Add addition water, if needed. Pour into pan of choice (loaf, donut, or muffin tin). Bake 40 to 50 minutes for loaf or 10 to 15 for donut/muffins or until a toothpick comes out clean.
  17. Note* You can sub maple syrup for the brown sugar and omit the water.
