Spicy Black Bean and Potato Stew

Ingredients
  • 1 medium red onion, small dice
  • 1 red bell pepper, small dice
  • 2 jalapeno peppers, small dice *
  • 1 Tablespoon minced garlic
  • 2 Tablespoons GF flour (or flour of choice) *
  • 1 cup vegetable broth *
  • 3 cups water (or broth)
  • 1 - [ 14.5 oz. can ] fire roasted petite diced tomatoes, pureed *
  • 3 cups small red baby potatoes, quartered
  • 2 - [ 15.5 oz. cans ] black beans, drained and rinsed

  • 1 Tablespoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 Tablespoons dried minced onions
  • ¼ teaspoon cayenne pepper *
  • ¼ teaspoon chipotle powder
  • ¼ teaspoon cumin
  • 2 teaspoons sea salt (+/-) *
  • ¼ teaspoon black pepper (+/-)
  • 1 teaspoon unsweetened cocoa powder *
