Delicious crunchy & cheesy crackers for you to snack on. These are perfect for anyone who is avoiding wheat & gluten, as well as sugar!
Ingredients
- 2 cups ground golden flaxseed
- 3 tbsp whole flaxseed (or sesame seeds)
- ¾ cup grated Parmesan cheese
- 2 tsp onion powder
- ½ tsp sea salt
- 1 large egg (egg substitute works well too)
- 2 tbsp extra-light olive oil or melted coconut oil
- ½ cup water
- 1 tsp coarse sea salt (or mix of spices such as garlic, chili & cumin)
Steps
- Preheat your oven to 325°F.
- Combine ground flaxseed, whole flaxseed (or sesame seeds), Parmesan onion powder and ½ tsp of sea salt in a large bowl.
- Whisk together the egg, oil & water in a medium bowl.
- Add the egg mixture into the flaxseed mixture and mix thoroughly.
- Cover 2 baking sheets with parchment paper. Divide the mixture in half on each baking sheet, then cover with another sheet of parchment paper. Use a rolling-pin and flatten the mixture to ⅛” thickness.
- Remove the top sheet of parchment paper from each baking sheet & sprinkle your coarse sea salt (or spice mixture) on top.
- Bake for 25 minutes, or until the entire flaxseed mixture is firm.
- Cool for at least 30 minutes. Cut with a pizza cutter, knife, or break by hand to make the crackers.
