Delicious crunchy & cheesy crackers for you to snack on. These are perfect for anyone who is avoiding wheat & gluten, as well as sugar!
Ingredients
  • 2 cups ground golden flaxseed
  • 3 tbsp whole flaxseed (or sesame seeds)
  • ¾ cup grated Parmesan cheese
  • 2 tsp onion powder
  • ½ tsp sea salt
  • 1 large egg (egg substitute works well too)
  • 2 tbsp extra-light olive oil or melted coconut oil
  • ½ cup water
  • 1 tsp coarse sea salt (or mix of spices such as garlic, chili & cumin)
Steps
  1. Preheat your oven to 325°F.
  2. Combine ground flaxseed, whole flaxseed (or sesame seeds), Parmesan onion powder and ½ tsp of sea salt in a large bowl.
  3. Whisk together the egg, oil & water in a medium bowl.
  4. Add the egg mixture into the flaxseed mixture and mix thoroughly.
  5. Cover 2 baking sheets with parchment paper. Divide the mixture in half on each baking sheet, then cover with another sheet of parchment paper. Use a rolling-pin and flatten the mixture to ⅛” thickness.
  6. Remove the top sheet of parchment paper from each baking sheet & sprinkle your coarse sea salt (or spice mixture) on top.
  7. Bake for 25 minutes, or until the entire flaxseed mixture is firm.
  8. Cool for at least 30 minutes. Cut with a pizza cutter, knife, or break by hand to make the crackers.
