Baked Cod with Lemon and Garlic
This baked cod is a fast-to-prepare main dish. Boil some baby gold potatoes and mash them while the fish bakes, then serve the fish over mashed potatoes on a bed of lightly wilted spinach. The luscious butter sauce adds flavor to both the potatoes and spinach.
Ingredients

  • 2 cloves garlic, minced
  • 1 tablespoon chopped parsley
  • 1 teaspoon thyme
  • ⅛ teaspoon paprika
  • ⅛ teaspoon dill
  • ⅛ teaspoon salt
  • 2 (8-ounce) cod fillets
  • 1 lemon, sliced
