Stir fried squash with panch puran and chilli
Ingredients
  • 680gms squash/ pumpkin cut into bite size chunks; cleaned with the skin left on
  • 3 tbsp vegetable oil
  • 1 heaped tsp panch phoron
  • 2 dried mild red chillies deseeded
  • 1½" ginger pureed to a paste
  • 1 tsp turmeric powder
  • ¼ tsp mild chilli powder
  • 1 heaped tsp coriander powder
  • Pinch of sugar
  • Salt to taste
  • 100mls water
  • Fresh coriander for garnish
