  • ¼ cup chicken fat, lard or butter
  • 3 large onions, sliced
  • 1 green pepper, seeded, cored & chopped
  • 3 or more cloves garlic, minced
  • 3 ribs celery, chopped
  • 4 pounds ground chuck beef
  • 1 teaspoon cumin powder
  • 1 teaspoon cayenne pepper
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • 1 teaspoon black pepper
  • 1 teaspoon celery seeds
  • 2 bay leaves, crushed
  • 1 20-ounce can tomatoes, preferably imported
  • 1 teaspoon salt, or more to taste
  • 2 cans red kidney beans
  • ¼ cup finely chopped parsley (*see notes)
